Food & Culture - What We Eat and Why

Nutrition is a critical component of a healthy lifestyle. While Americans are well aware of this and enormous government resources have been expended to inform Americans, there continues to be widespread misconceptions about healthy eating habits. This course will look at government recommendations for healthy eating, educational materials developed to help consumers eat well, and the process of how recommendations are developed. Each student’s diet will be analyzed in a variety of different ways, and the instructor will lead students in strategizing for change when needed. Overweight and obesity will also be an emphasis in the course, looking at societal changes that might be contributing to the obesity epidemic and suggesting potential remedies to the problem. By the end of the course, students will be better prepared to make informed decisions about their eating habits and health.
