OU-Tulsa Culinary Medicine Pantry Challenge

Do you have a can of pumpkin left over from Thanksgiving, a random bag of beans in your pantry or a jar of spices you’re not sure how to use? Chef Valarie Carter of OU Culinary Medicine, a program of the OU-TU School of Community Medicine and the Hudson College of Public Health, is ready to show you how to make the most of the groceries you have at home and transform them into a delicious, nutritious meal.

In the first two installments of Pantry Challenge, Chef Carter shows viewers how to use a bag of black beans to make two different tasty meals. She demonstrates ways to use common seasonings most people have on hand and ways to substitute for different items. She also answers a viewer question about a more unique spice – Chinese five spice.

If you would like Chef Carter to help in your kitchen, email one to three items you are struggling to use in your cooking to culinarymedicine@ouhsc.edu. Don’t forget to include a picture of yourself with your ingredient. Chef Carter will choose from submissions for future episodes of Pantry Challenge.
